We are still looking for fun frozen foods throughout the month of August! Check out this recipe for Mint Chocolate Freeze Pops. You won’t believe what makes them green, but picky eaters love them. It’s one more way to add in a natural food coloring and add in a few extra veggies along the way…
You will need six 5 oz. paper cups and six wooden craft sticks to make this recipe.
Layer One:
1 ½ cups low fat vanilla yogurt
1/2 cup green spinach leaves
1 tablespoon honey
2-3 drops mint extract
1 teaspoon vanilla extract
Place all of the ingredients for layer one into a blender and blend thoroughly. Evenly pour the mixture into the cups and freeze for one hour before making & adding in the second layer.
Layer Two:
1 cup low fat vanilla yogurt
2 tablespoons honey
1 tablespoon cocoa powder
½ teaspoon vanilla extract
Fold the yogurt, honey, cocoa powder and vanilla extract together. Let the yogurt set for at least 15 minutes in the refrigerator. Add the second layer to the pops, insert the craft sticks and let the pops set overnight before removing the cup and serving.
Removing the Cup: You can either cut the cup off or run it under warm water to release the pop.
Wooden Craft Sticks: These can be found in the school supply aisle at your local Price Chopper Supermarket or craft store.
